Ingredients

Pasta Ke Liye:

  • 200-250 gram pasta (penne ya fusilli achha rahega)

  • Zyada pani, ubalne ke liye

  • 1 chammach namak

White Sauce (Béchamel) Ke Liye:

  • 3 bada chammach makkhan (butter)

  • 3 bada chammach maida (all-purpose flour)

  • 3 cup doodh (full cream milk, thoda garam kiya hua)

  • Swad anusaar namak

  • ½ chammach kali mirch powder (black pepper)

  • ½ chammach laal mirch powder (optional)

  • ½ cup grated cheese (cheddar ya mozzarella)

  • 1 chammach oregano

  • ¼ chammach nutmeg powder (jaiphal, optional)

Tadka aur Sabziyan (Optional):

  • 1 chammach tel ya makkhan

  • 3-4 lasan (garlic) kuchi hui

  • 1 pyaz (onion), barik kata hua

  • 1 shimla mirch (capsicum), barik kata hua

  • ½ cup sweet corn

  • Broccoli ya mushrooms (agar pasand ho)

Method / Preparation

Follow step-by-step instructions

Step 1: Pasta Pakayein

  1. Ek badde patile mein pani garam karein.

  2. Ubal aane par 1 chammach namak aur pasta daalein.

  3. Package par likhe time ke anusaar pakayein (usually 8-10 minute).

  4. Pasta ko chann lein aur thande pani mein nahayein taaki chasp na lage. Ek chammach tel mila sakte hain. Side par rakh dein.

Step 2: White Sauce (Béchamel) Banayein

(Ye sauce ko alag se banayein, pasta mein milane se pehle.)

  1. Ek kadei (kadhai) mein 3 bada chammach makkhan pighlayein.

  2. Isme 3 bada chammach maida daal kar medium aanch par 2 minute tak chalate hue bhoonein. Maida ka rang badalna nahi chahiye, sirf raw smell jaana chahiye.

  3. Ab thoda-thoda kar ke garam doodh daalna shuru karein, ek saath nahi. Ek chammach doodh daalo, whisk karo jab tak smooth ho jaaye, phir aur doodh daalo.

  4. Aisa isliye karte hain taaniye gathliyan (lumps) na banein. Poora doodh milaane tak whisk karte rahein.

  5. Sauce garhana (thick) hone lagega. Ab namak, kali mirch, oregano, aur nutmeg powder daal dein.

  6. Grated cheese daal kar tab tak pakayein jab tak cheese melt na ho jaaye. Sauce cream jaisa ho jaana chahiye. Gas band kar dein.

Step 3: Tadka aur Milana (Optional Step)

  1. Alag se kadhai mein 1 chammach tel garam karein.

  2. Kuchi hui lasan daal kar 30 second bhunein.

  3. Kata hua pyaz daal kar 2 minute tak bhunein jab tak soft ho.

  4. Ab apni pasand ki sabziyan (shimla mirch, corn, mushrooms) daal kar 3-4 minute tak high flame par bhunein.

  5. Ab is kadhai mein boiled pasta aur banaya hua white sauce daal dein.

  6. Achhe se mix karein taaki sauce har pasta piece par lage. 2 minute tak saath pakayein.

  7. Laal mirch powder se garnish karein.

Step 4: Serve Karein

Garam-garam serve karein! Upar se thoda aur cheese ya oregano sprinkle kar sakte hain.
