Ingredients

  • 1 cup rice
  • 1/2 cup urad dal (split black gram)
  • 1/4 cup chana dal (split chickpeas)
  • 1/4 cup poha (flattened rice)
  • 1/2 teaspoon methi dana (fenugreek seeds)
  • Namak (salt) to taste
  • Pani (water) as required
  • Tel (oil) for cooking dosa

For Potato Filling (Masala):

  • 3-4 medium-sized boiled aloo (potatoes), mashed
  • 1 medium-sized pyaaz (onion), finely chopped
  • 1-2 hari mirch (green chilies), finely chopped
  • 1/2 teaspoon haldi powder (turmeric powder)
  • 1/2 teaspoon lal mirch powder (red chili powder) (adjust to taste)
  • 1/2 teaspoon rai (mustard seeds)
  • 1/2 teaspoon jeera (cumin seeds)
  • Few curry leaves
  • 1 tablespoon tel (oil)
  • Namak (salt) to taste
  • 2 tablespoons chopped hara dhania (coriander leaves) for garnish

For White Coconut Chutney:

  • 1 cup grated nariyal (coconut)
  • 1-2 hari mirch (green chilies)
  • 1/2 inch adrak (ginger)
  • Kuch curry patta (few curry leaves)
  • 1 tablespoon chana dal (split chickpeas)
  • 1 tablespoon urad dal (split black gram)
  • 1 tablespoon tel (oil)
  • Pani (water) as required
  • Namak (salt) to taste

For Green Coriander Chutney:

  • 1 cup hara dhania (coriander leaves)
  • 1-2 hari mirch (green chilies)
  • 1 tablespoon adrak (ginger) chopped
  • 1 tablespoon nariyal (coconut) (optional)
  • Nimbu ka ras (lemon juice) from half lemon
  • Namak (salt) to taste
  • Pani (water) as required

For Red Tomato Chutney:

  • 2 medium-sized tamatar (tomatoes), chopped
  • 2-3 sukhi lal mirch (dry red chilies)
  • 1 tablespoon chana dal (split chickpeas)
  • 1 tablespoon urad dal (split black gram)
  • 1 tablespoon tel (oil)
  • Pani (water) as required
  • Namak (salt) to taste

Method / Preparation

Follow step-by-step instructions

For Dosa:

  1. Dosa batter banane ke liye, rice, urad dal, chana dal, poha, aur methi dana ko alag alag bowls mein dho kar 4-5 ghante ke liye paani mein bhigokar rakh dein.

  2. Bhigoye hue sabhi ingredients ko mixer grinder mein dal kar pani ke saath achhe se grind karein. Ek smooth batter taiyar karein aur namak milakar acche se mix karein.

  3. Batter ko 6-8 ghante ferment hone ke liye rakh dein.

  4. Fermented batter mein thoda pani milayein taki batter spread karne ke liye thoda patla ho jaye.

  5. Ek non-stick tawa par thoda tel garam karein. Fir, tawa ko saaf karke ek wet cloth se cover kar dein.

  6. Tawa ko garam hone dein aur batter se dosa banayein. Tawa par batter dal kar use circular motion mein spread karein.

  7. Dosa ko halka brown hone tak cook karein aur fir us par aloo ki filling daal kar dosa ko fold karein.

For Potato Filling (Masala):

  1. Ek pan mein tel garam karein aur usme rai, jeera, aur curry patta daalein. Saute karein jab tak rai crackle na karein.

  2. Fir, pyaaz aur hari mirch daal kar golden brown hone tak saute karein.

  3. Ab, mashed aloo, namak, haldi powder, lal mirch powder daal kar acche se mix karein.

  4. Hara dhania se garnish karein.

For White Coconut Chutney:

  1. Mixer grinder mein nariyal, hari mirch, adrak, curry patta, chana dal, urad dal, aur thoda pani daal kar smooth paste bana lein.

  2. Namak milayein aur fir pani daal kar chutney ko adjust kar lein.

For Green Coriander Chutney:

  1. Mixer grinder mein hara dhania, hari mirch, adrak, nariyal, nimbu ka ras, namak, aur pani daal kar smooth paste bana lein.

For Red Tomato Chutney:

  1. Ek pan mein tel garam karein aur usme sukhi lal mirch, chana dal, urad dal daal kar saute karein jab tak daal aur lal mirch golden brown na ho jayein.

  2. Fir, tamatar daal kar use achhe se soft hone tak pakayein.

  3. Ab, thanda hone par mixer grinder mein tamatar, sukhi lal mirch, daal aur thoda pani daal kar smooth paste bana lein.
