Ingredients

  • 1 cup arhar dal (split pigeon peas)
  • 2 cups pani (water) for pressure cooking dal
  • 1 tablespoon tel (oil)
  • 1/2 teaspoon rai (mustard seeds)
  • 1/2 teaspoon jeera (cumin seeds)
  • 1/4 teaspoon hing (asafoetida)
  • 10-12 kadi patta (curry leaves)
  • 2 pyaaz (onions), chopped
  • 1 tamatar (tomato), chopped
  • 1/2 cup tinda, kaddu, ya aloo (pumpkin, bottle gourd, or potato), chopped (as per preference)
  • 1/2 cup gajar (carrots), chopped
  • 1/2 cup beans, chopped
  • 1/4 cup drumsticks (optional)
  • 2 hari mirch (green chilies), slit (adjust to taste)
  • 1 tablespoon tamarind pulp
  • 1 tablespoon sambar masala (available in stores)
  • 1/2 teaspoon haldi powder (turmeric powder)
  • 1 teaspoon lal mirch powder (red chili powder) (adjust to taste)
  • 1 tablespoon dhania powder (coriander powder)
  • Namak (salt) to taste
  • 2 tablespoons chopped hara dhania (coriander leaves) for garnish

Method / Preparation

Follow step-by-step instructions
  1. Arhar dal ko dho kar pressure cooker mein pani daal kar pakayein. 3-4 whistles tak pakayein ya jab tak dal mushy na ho jayein.

  2. Cooked dal ko mash kar lein aur fir ek side par rakh dein.

  3. Ek bada patila mein tel garam karein aur usme rai, jeera, aur hing daal kar saute karein jab tak rai crackle na karein.

  4. Fir, curry patta, pyaaz, aur hari mirch daal kar golden brown hone tak saute karein.

  5. Ab, tamatar aur tinda, kaddu, ya aloo daal kar use soft hone tak pakayein.

  6. Fir, gajar aur beans daal kar unhe bhi soft hone tak cook karein.

  7. Optional: Agar drumsticks use kar rahe hain to unhe bhi ab patile mein daal dein.

  8. Ab, tamarind pulp, sambar masala, haldi powder, lal mirch powder, dhania powder, aur namak daal kar masalon ko mix karein.

  9. Pakayein masalon ko 2-3 minutes tak, taki woh acche se combine ho jayein.

  10. Ab, patile mein dal ka pani (jo ki pani mein pakaya hua hai) daal kar sambar ko ek boil aane tak cook karein.

  11. Last mein mashed dal daal kar sambar ko aur 5-10 minutes tak sim mein pakayein.

  12. Garnish ke liye hara dhania se sajayein.
