Ingredients

  • 4 bade aloo (large potatoes), boiled and mashed
  • 1 kata hua pyaaz (chopped onion)
  • 1 kata hua tamatar (chopped tomato)
  • 1 kata hua shimla mirch (chopped capsicum)
  • 1/2 kata hua gajar (chopped carrot)
  • 1/4 kata hua phool gobhi (chopped cauliflower)
  • 1/4 kata hua beans (chopped beans)
  • 1/4 cup matar (green peas)
  • 4 lahsun ki kaliyan (garlic cloves), chopped
  • 1 chammach pav bhaji masala (1 tbsp pav bhaji masala)
  • 1 chammach lal mirch powder (1 tbsp red chili powder)
  • 1 chhota sa chammach haldi powder (1 small tsp turmeric powder)
  • 1/2 chhota sa chammach dhaniya powder (1/2 small tsp coriander powder)
  • 1 bada chammach namak (1 tbsp salt)
  • 1/2 bada chammach cheeni (1/2 tbsp sugar)
  • 4 bade chammach tel (4 tbsp oil)
  • 2 pav (2 pav buns)
  • 1 bada chammach makhan (1 tbsp butter)
  • Kati hui hari dhaniya (chopped coriander leaves) garnish ke liye (for garnish)
  • Lahsun ki chutney aur lachha pyaaz (garlic chutney and sliced onions) serving ke liye (for serving)

Method / Preparation

Follow step-by-step instructions
  1. Heat oil in a large pan and sauté the chopped onions and garlic until they turn golden brown.

  2. Add chopped tomatoes to the pan and cook them until they become soft.

  3. Then, add chopped capsicum, carrots, cauliflower, beans, and green peas along with a little water. Boil the vegetables until they become tender.

  4. When the vegetables are fully cooked, add pav bhaji masala, red chili powder, turmeric powder, coriander powder, salt, and sugar.

  5. Mix the vegetables well with the spices and let it simmer.

  6. Mash the mixture with a masher until it reaches a smooth consistency.

  7. Add butter to the pav bhaji and mix it well.

  8. Toast the pav buns on both sides and serve them with the prepared pav bhaji.

  9. Garnish the pav bhaji with chopped coriander leaves and serve it with garlic chutney and sliced onions on the side.
