Heat oil in a large pan and sauté the chopped onions and garlic until they turn golden brown.
Add chopped tomatoes to the pan and cook them until they become soft.
Then, add chopped capsicum, carrots, cauliflower, beans, and green peas along with a little water. Boil the vegetables until they become tender.
When the vegetables are fully cooked, add pav bhaji masala, red chili powder, turmeric powder, coriander powder, salt, and sugar.
Mix the vegetables well with the spices and let it simmer.
Mash the mixture with a masher until it reaches a smooth consistency.
Add butter to the pav bhaji and mix it well.
Toast the pav buns on both sides and serve them with the prepared pav bhaji.
Garnish the pav bhaji with chopped coriander leaves and serve it with garlic chutney and sliced onions on the side.
