Chawal aur urad dal ko alag-alag bowls mein dho kar pani mein 4-5 ghante ke liye bhigokar rakh dein.
Bhigoye hue chawal ko mixer grinder mein daal kar pani ke saath smooth paste bana lein.

Dono pastes ko ek bade mixing bowl mein daal kar acche se mix karein. Namak daal kar batter ko achhe se mix karein.
Batter ko 6-8 ghante ya raat bhar ferment hone ke liye rakh dein. Ferment hone par batter ki volume double ho jayegi.
Batter taiyar ho gaya hai, ab usme thoda pani daal kar achhe se mix karein, taki idli banane ke liye consistency sahi ho.
Idli molds ko tel se grease karein taki idlis easily nikal sakein.
Gas par ek large pot ya idli steamer preheat karein aur usme pani garam karein.
Fermented batter ko acche se mix karein aur idli molds mein daalein.
Idli steamer mein idli molds ko rakh kar 10-12 minutes tak steam karein ya jab tak idlis pak na jayein.
Idlis taiyar hai! Ek knife ya spoon ki madad se idlis ko nikal lein.
Inhe hari chutney, sambar, ya chutney powder ke saath serve karein aur swadisht South Indian breakfast ka maza uthayein.
