Ingredients

  1. 2 cups grated carrots (peeled and washed)
  2. 1 teaspoon salt
  3. 1/2 teaspoon turmeric powder
  4. 1 teaspoon mustard seeds
  5. 1/2 teaspoon red chili powder
  6. 1 tablespoon mustard oil (heated and cooled)
  7. 2 tablespoons vinegar or lemon juice
  8. Optional: 1/2 teaspoon cumin seeds

Method / Preparation

Follow step-by-step instructions
  1. Grate the carrots finely and lightly squeeze to remove excess water.
  2. In a bowl, mix the carrots with salt, turmeric powder, red chili powder, and (if using) cumin seeds and mustard seeds.
  3. Add vinegar (or lemon juice) and drizzle the cooled mustard oil over the mixture.
  4. Toss all ingredients well until the carrots are uniformly coated.
  5. Transfer to an airtight jar and let the pickle mature at room temperature for 2 days, stirring occasionally.
